How to Cook
Bring large pot with 2/3 full of salted water to a boil with fat meat. Add greens.
Start timing when you put the greens in. Boil greens until soft, may take 25 to 45 mins. Hint: Fresh greens will cook down to 1/4, or less, of their precooked volume.
How to Freeze
Cut off large, tough stems; discard all damaged leaves.
Wash thoroughly several times.
Blanch 1 lb greens to 2 gallons water. Blanching times are as follows; Kale, Mustards, Turnip Greens 2 mins, Collards 3 mins.
