Baked Tomatoes
1 qt diced tomatoes
5 slices of bread
pinch of baking soda
1 tsp cinnamon
1 tsp nutmeg
½ c flour mixed w/ water to make thick
1 ½ - 2 c sugar paste

Mash bread into tomatoes.
Mix all remaining ingredients into tomato mixture.
Pour mixture into greased 8x8 baking dish.
Cook for 45 min. to 1 hr at 350 degrees.

Stewed Tomatoes
6 lg ripe tomatoes
½ tsp salt
2 TBS butter
1/8 tsp pepper
1 TBS sugar
½ tsp basil

Peel tomatoes and cut into chunks.
Melt butter and add tomatoes and remaining ingredients.
Simmer 10 mins or until tomatoes are soft.

Fried Green Tomatoes
6 med green tomatoes
½ tsp salt
2 eggs
½ tsp oregano
¼ c milk
1/8 tsp pepper
1 c corn meal, bread crumbs or flour
2 TBS butter
1 TBS veg oil

Slice tomatoes into ¼ to ½ inch slices.
Beat together eggs and milk.
Combine corn meal, salt, oregano and pepper.
Heat butter and oil in a skillet.
Dip tomato slices in egg mixture then in corn meal mixture.
Fry tomato slices, turning once, until golden brown on both sides.
