Marinated Scallops Wrapped in Bacon
¾ cup of maple syrup
¼ c low sodium soy sauce
1 TBS Dijon mustard
12 large scallops, halved
12 slices smoked bacon, halved
2 TBS of brown sugar
Stir together maple syrup, soy sauce and mustard until smooth.
Add the scallops, toss to coat.
Cover bowl with plastic wrap and marinate for at least 1 hour.
Preheat oven to 375 degrees. Line a rimmed baking sheet with aluminum foil.
Arrange bacon on baking sheet so that they don’t overlap.
Bake for about 8 mins, bacon should still be soft.
Take bacon off sheet and pat dry, removing all excess grease from bacon and baking sheet.
Wrap each scallop with a piece of bacon, securing with a toothpick.
Place scallops on baking sheet and sprinkle with brown sugar.
Bake scallops in preheated oven for 10-15 min or until bacon is crispy and scallops are opaque, turning scallops once.
