How to Cook
Bring 1 inch of water to a boil.
Add 4 cups shelled peas and 1 tsp. salt.
Return to a boil; reduce heat and simmer for 5 mins.
Serve buttered or plain.
How to Freeze
Shell peas and wash.
Blanch 1 ½ mins.
Cool immediately in cold water, place in freezer package.
Peas and Dumplings
Cook 2 strips of bacon in 3 cups of water for ½ hr.
Add small dumplings and cook until done (about 5 mins for home made dumplings, about 15 mins for Annie’s frozen dumplings).
Add peas. Cook for about 30-40 mins.
