How to Cook
Wash beets and trim all but 1 inch of the stem. Leave tap root on beets. Place in a 2 qt sauce pan with 1 inch of salted water. Bring to a boil. Reduce heat and simmer gently, partially covered, until beets are tender. Medium to small beets take about 30 mins. Drain and cool; trim stem and root; peel. Reheat in melted butter. Season to taste.
